Get that campfire rolling! You’ll want a hot bed of coals ready for these campfire foil packets loaded with fresh vegetables, plant-based sausage & seasonings. If you can’t find vegan sausages in your local grocery store, seitan makes for a great swap here.
For this recipe, you’ll steam these vegetables in their own juices using a tent-style foil packet over a campfire. No campfire? No worries! These foil packets also work well on the grill or in the oven. On serving, drizzle with your favorite barbecue sauce.
How To Make This Recipe
Before we assemble our ingredients, we get our campfire rolling to ensure we have a hot bed of coals for indirect cooking. Of course, we also make these our own oven from time to time as well. If using an oven, we preheat it to 400°F (205°C).
We then by assemble our ingredients. We love loading our foil pouches with fresh vegetables. So, we often include a solid mix of bell pepper, onion, mushrooms, carrots, and potatoes. Sometimes we get creative, and other times we just use what we have on hand. We also like to add protein to our packets, so we like to throw in sliced plant-based sausages. Our spices include liquid smoke, chili powder, cumin, garlic powder, and paprika. We’ll finish this dish with a little barbecue sauce.
Prepare Foil Tents
Next, we pull our a large bowl and mix together our vegetables, protein, and seasoning. We also stir in our vegetables. We’ll add a little liquid smoke when we’re cooking these in the oven.
Once we mix and season our vegetables, we’ll pull our four long pieces of heavy duty aluminum foil. We create two packets; each with two sheets of foil stacked in a criss-cross fashion. We split our veggie mixture between our packets. We bring the sides up together and roll them down a few times to create a little tent to support steaming.
Cook Them Up
When we cook these over a campfire, we aim for indirect heat. So, we place our foil packets on a grill grate over some coals–but not directly over the fire itself. By cooking these campfire foil packets indirectly, we allow the vegetables to steam and soften often without burning. In the oven, this process takes about 40 minutes. On the campfire, the timing is variable depending on the heat of your coals.
Once your vegetables have softened, your campfire foil packets are ready to eat! To finish them off, drizzle them with your favorite barbecue sauce. Enjoy!

- 2 large carrots peeled & sliced
- 1 1/2 cups mushrooms sliced
- 1 large onion chopped
- 1 large potato diced
- 2 each vegan sausages sliced
- 1/2 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 2 tablespoons vegetable oil
- 1/4 teaspoon liquid smoke optional
- 3 tablespoons barbecue sauce
- salt & pepper to taste
Instructions
- Get your campfire rolling, as you’ll want a hot bed of coals ready for indirect cooking. If you opt to make this in an oven, preheat your oven to 400°F (205°C)
- In a large bowl, mix the pepper, carrots, mushrooms, potato and sausages. Add chili powder, cumin, paprika and garlic powder.
- Stir in the vegetable oil and optional liquid smoke.
- Get out four long pieces of heavy duty aluminum foil. Each sheet should be roughly 2 feet long. You’ll be creating two packets, and each packet will use two sheets of foil stacked in a criss-cross fashion. Set up the foil for each of your packets.
- Pour half of the veggie mixture into the center of each of the packets.
- For this recipe, you’ll be using a tent-style foil packet. Bring the sides up together and roll them down a few times, leaving some air between the food and the top of the packet. Then, roll up the sides to close the packet.
- Place the foil packets on a grill grate over some coals, but not directly over the fire itself. By cooking these campfire foil packets indirectly, you’ll allow the vegetables to steam and soften often without burning.
