How To Make This Recipe
To ensure our beans retain their bright flavor with an al dente bite, we lean into big pot boiling for this green beans recipe. Sautéed green beans are delicious, but they often take on the flavor of the sauce used for cooking.
We want boiled, not fried green beans. We’re looking for those fresh green beans to stand on their own, so we start by bringing a large pot of salted water to boil over high heat on our stovetop.
Prepare The Beans
While our water comes to temperature, we trim and wash our fresh green beans. Once our water comes to a rolling boil, we add our string beans and cook them until just crisp tender. This process takes just a few minutes. Once crisp tender, we drain our green beans and set them aside in a large bowl.
Make The Sauce
Next, we warm a large skillet over medium heat. Then, we add our olive oil and toast our walnuts for 2 minutes or until fragrant. Once the walnuts are ready, we add minced garlic and fresh parsley. We cook this sauce, stirring regularly, for about 30 seconds to soften the garlic. At this point, we’re ready to finish the dish.
Ready To Serve
Once our minced garlic softens, we season our sauce with salt and pepper. Then, we pour the sauce on top of our al dente green beans. We gently toss our beans to evenly coat and adjust seasonings as needed.
If we find we need to loosen up our sauce to cover the green beans, we just add a tablespoon of water or two as needed. At this point, our dish is ready to serve. If desired, top with a little soy parmesan.

- 2 pounds green beans trimmed and washed
- 2 tablespoons olive oil extra virgin
- 2 cloves garlic minced
- 1 tablespoon parsley fresh, chopped
- 1/4 cup walnuts chopped
- salt to taste
- black pepper to taste
- 1/4 cup non-dairy parmesan optional
Instructions
- In large pot of boiling salted water, cook green beans until just tender, about 5 minutes. Drain and rinse beans. Pour into a large bowl and set aside.
- Next, sauté the walnuts in olive oil or walnut oil in a small sauté pan over medium heat until fragrant, about 2 minutes. Add both the garlic and parsley. Continue to cook for another 30 seconds. Remove from heat. Season with salt & pepper to taste.
- Now, grab that bowl of green beans. Add soy parmesan, if desired. Pour the nut mixture over the green beans and toss. Once combined, your garlicky green beans with walnuts are ready to serve. Enjoy!
