Mirin adds subtly sweet and tangy flavor along with a richness that accentuates our fruit blend while complementing the spice.
How To Make This Recipe
We start by washing and dicing our mango, cucumber, and red bell pepper. We typically use English cucumbers because they’re practically seedless and readily available. If you choose to use a conventional cucumber, we recommend scooping out the seeds first.
Next, we add our cucumber, mango, and red bell pepper to a large mixing bowl. Because we don’t want to squish our juicy mango pieces, we prefer to use clean hands to gently toss the cucumber mixture.
Now, we prepare the sweet, tangy dressing. Into a small bowl, we add mirin, soy sauce, and red pepper flakes and stir to combine. If you don’t have mirin handy, rice vinegar or white wine vinegar will also do the trick. Because mirin brings sweetness to this recipe, you’ll want to counteract that sour vinegar flavor with a tablespoon of sugar.
Once we mix our dressing, we pour it over our cucumber mixture. With a large spoon, we then stir gently to coat.
