This savory pita spread with tofu & za’atar offers an easy, meal-worthy alternative to hummus. Spread on a sandwich or serve as a dip. For a quick lunch, I often smear a thick layer of this spread into a nice warm pita pocket filled with chickpeas, cucumber and tomato. If you’re expecting company, serve as a dip with crudite, pita chips or crackers!
Because we’re using this as a spread, we prefer to use extra firm tofu in this recipe for body and texture. For a creamier dip, feel free to use softer tofu. Fresh ingredients brighten this dip, so we also recommend using fresh parsley and lime. That said, this dish is pantry friendly. So, use what you have!
What You’ll Need
- 1 lb tofu, extra firm
- 1 tsp Za’atar
- 1 tsp chopped parsley
- 1 tsp lemon juice
- Olive oil, to taste
- Fine sea salt & white pepper to taste
How To Make It
- Throw all ingredients into a food processor and secure the lid. Process until combined.
- Stream just a little olive oil into the tofu mixture while processing until your obtain your desired consistency.
- Garnish your pita with chopped parsley, olive oil and za’atar to taste. Enjoy!
