Pumpkin spice energy bites deliver everything you love about pumpkin spice in a bite-sized morsel. These no-bake pumpkin energy balls surprisingly healthy, and they come together in a snap. They’re the perfect grab-and-go afternoon snack.
How To Make This Recipe
This autumn treat delivers all of those seasonal flavors we crave. Pumpkin, oats, maple, peanut butter, dark chocolate chips and pumpkin spice come together to make this no-bake delight. You won’t even need your food processor for this gluten-free treat.
Prepare Pumpkin Mixture
We start by adding all of our ingredients to a large mixing bowl. If you don’t have peanut butter on hand, almond butter also works well here. To reduce our glycemic index, we typically use sugar-free maple syrup in this recipe. Using a spatula, we stir our mixture until all of the ingredients are thoroughly combined. Once mixed, we cover the bowl and allow it to rest in the refrigerator for an hour.
Ready To Roll
Now that our oats have softened, we’re ready to roll these energy bites. With a tablespoon, we place a scoop of our pumpkin mixture into our clean hands. We roll this into a 1-inch ball. Then, we repeat this until we’re all out of our pumpkin mixture. We typically get around 15 energy balls from our mix.
Once you’ve rolled out your pumpkin spice energy bites, they’re ready to eat. We store our leftover pumpkin energy balls in the refrigerator in a sealed container for up to 1 week. If we’re feeling ambitious, we’ll triple our recipe and store a bunch in the freezer for up to three months.

Pumpkin Spice Energy Bites

- 1 1/2 cups old-fashioned oats
- 1/4 cup dark chocolate chips non-dairy
- 1/3 cup pumpkin puree
- 1/3 cup peanut butter creamy
- 1/4 cup sugar-free maple syrup or maple syrup or agave nectar
- 1 teaspoon vanilla extract
- 1/2 teaspoon pumpkin pie spice or more to taste
- 1/8 teaspoon salt
Instructions
- Add all ingredients into a large mixing bowl. Stir until thoroughly combined.
- Cover and set in the refrigerator. Allow to rest for an hour.
- With a tablespoon, scoop out the mixture. With clean hands, roll into 1-inch balls.
- Enjoy, or store in the refrigerator in a sealed container for up to 1 week.
