What You’ll Need
- 1 cup sweet potatoes, diced
- 1/2 cup onion, chopped
- 1/2 cup kale, stems removed & chopped
- 1/2 cup black beans
- 1/4 tsp garlic powder
- 1/2 tsp cumin
- 1 tbsp olive oil, extra virgin
- 3 tbsp salsa
- Salt and pepper to taste
How To Make It
- Sauté sweet potato and onion in olive oil over medium-low heat until tender.
- Reduce heat. Add kale and cook until tender.
- Add beans and seasonings. Continue to cook until warmed through.
- Serve with salsa. Enjoy!
