Kick up your roasted eggplant, steamed vegetables & baked potatoes with this bright Sweet Red Pepper Sauce. By using steamed red peppers, the resulting sauce brings forward a mellow sweetness. This sweetness accentuates the flavors of the underlying vegetables without overpowering them. If you prefer a charred flavor in your sauce, simply roast your red bell peppers in lieu of steaming during the first step. This sauce comes together quickly, but it does require a few kitchen tools–a steamer basket, food processor and a mesh strainer. Try it with our Smashed Potatoes! Gluten, soy and oil free.
What You’ll Need
- 2 large red bell peppers, chopped into large pieces
- 1 tsp lemon juice
- 1/2 tsp agave nectar, or to taste
- 3/4 tsp minced garlic
- 1/2 tsp onion powder, or to taste
- 1/4 tsp sea salt, or to taste
- 1/8 tsp black pepper, or to taste
How To Make It
- Using a steamer basket, steam red pepper over boiling water for 10 minutes or until softened. Allow to cool for 5 minutes.
- Using a food processor or blender, puree your softened pieces of red pepper.
- Because we are making a sauce, let’s refine it one more time by pushing your processed red pepper puree through a mesh strainer into a medium mixing bowl.
- Now, whisk in all remaining ingredients. Because there is so much variance in bell pepper size and sweetness, this is a great time to grab a clean spoon and taste the sauce. Adjust the seasonings to your liking.
- Serve your sweet red pepper sauce over eggplant, roasted vegetables or fresh baked potatoes.
