Marinating fresh tomatoes in a thyme-infused olive oil blend brings out their flavor and draws out those rich juices. We love to soak up those flavorful juices with a loaf of rustic bread.
How To Make This Recipe
We have a bumper crop of tomatoes this summer. And, we couldn’t be happier. Lucky for us, this thyme-marinated tomato salad is both flavorful and easy to make. Fresh, ripe tomatoes are essential to this salad. For visual interest, we prefer to use a mix of cherry tomatoes and small tomatoes.
For best flavor, we highly recommend using fresh herbs. While we like thyme, other fresh herbs such as oregano, parsley, or basil also work well. We also recommend using your best extra virgin olive oil here, as the flavors will shine.
Mix Tomatoes And Marinade
Once we’ve assembled our ingredients, we add them to a medium mixing bowl. Then, we gently mix them using a spoon. While stirring, we’re careful not to damage those tender tomatoes.
Rest At Room Temperature
Next, we allow our tomato salad to rest at room temperature for at least a half hour. We’ve found that an hour of rest, however, yields the best flavor. We toss our mixture occasionally to blend the flavors. By marinating our sliced tomatoes, we intensify their flavor and draw out those rich juices.
And, just like that, we’re ready to eat. We love soaking up those juices with rustic, crusty bread or freshly grilled ciabatta.

- 1 pound tomatoes preferably various sizes, cut into wedges or halved if small
- 2 teaspoons olive oil extra-virgin
- 1 teaspoon red wine vinegar
- 2 teaspoons fresh thyme
- 1/4 teaspoon minced garlic
- 1/2 teaspoon salt kosher
- 1/4 teaspoon black pepper freshly ground
Instructions
- Combine tomatoes, olive oil, vinegar, fresh thyme, garlic, salt, and pepper in a medium bowl.
- Allow to rest for one hour, tossing occasionally, or until deeply flavored and juicy.
