These tropical overnight oats loaded with pineapple and coconut taste like sunshine in a bowl. While sleeping, these rolled oats sweeten as they soften into a perfect porridge. The next morning, grab a spoon and dig into this delicious, ready-to-eat tropical breakfast.
How To Make This Recipe
Only a small handful of ingredients are needed for this grab-and-go breakfast. We start with old-fashioned rolled oats. When we want thicker oats or a protein kicker, we’ll also add a teaspoon of chia seeds. Because we’re looking for that tropical flavor, we chose to use an unsweetened coconut milk beverage. However, any non-dairy milk will work well.
We also add vanilla and agave nectar for sweetness and depth. Then, we bring in pineapple and unsweetened coconut flakes to deliver that tropical flavor. When we want to cut back on the sugar, we’ll substitute sugar-free maple for the agave nectar and use either fresh or no-sugar added canned pineapple.
Prepare Oats
We begin by combining our oats, optional chia seeds, non-dairy milk, pineapple, vanilla, and agave nectar in a small bowl or mason jar.
Next, we stir everything together. We then press the mixture down with our spoon to fully immerse our oats.
And, that’s it! We cover our mason jar with lid and chill in the refrigerator overnight. When we’re in a rush, we’ll just let them soak 3 hours or so. We’ve learned that they don’t necessarily have to be soaked overnight to be enjoyable. But, the longer they soak–the better they get!
Ready To Serve
In the morning, we prefer to grab a spoon and eat these oats cold right from the jar. Before serving, we top with coconut for that perfect little crunch.
For easy meal prep, we prepare these overnight oats in batches and enjoy over the course of several mornings. To mix things up, we’ll occasionally heat these oats before serving.

Instructions
- Combine oats, optional chia seeds, non-dairy milk, pineapple, vanilla, and agave nectar in a small jar. Stir and press down with a spoon to ensure all oats have been immersed in the non-dairy milk.
- Cover with lid and chill in the refrigerator overnight.
- To serve, stir in a little more coconut milk, if desired, for consistency. Then, top with coconut for a little crunch.
