How To Make This Recipe
First, we preheat our oven to 350°F and assemble our ingredients. We’re pulling together zucchini, tomato sauce, olive oil, and all of the toppings.
Zucchini serves as the nutritional star of this recipe. It’s loaded with fiber, vitamins, and minerals. We slice our big ole zucchini into rounds, which should be no more than 1-inch thick.
Next, we place our zucchini rounds on a baking sheet. We drizzle each round with our olive oil and add pinch of salt. Before we add our toppings, we bake these rounds in our preheated oven for just a few minutes until they slightly tender.
Add Toppings
We then remove our zucchini rounds from the oven and add our toppings. We start by adding a pinch of non-dairy cheese shreds.
Next, we spoon a thin layer of sauce over our cheese. Order of operations is a matter of personal preference here. We’ve found that some non-dairy cheeses tend to dry out when left exposed in the oven, which is why we’re adding a dollop of sauce on top of the cheese.
If you prefer to add your sauce before the cheese, go for it.
Finally, we add our toppings. We’re obsessed with olives these days, but feel free to swap in whatever toppings you prefer. When it comes to topping our pizza bites, our options are endless.
Bake Those Bites
We return our baking sheet to the oven, and continue to bake until the zucchini is tender and cheese is melted. This typically takes around 10 minutes.

- 1 tablespoon oregano leaves fresh and chopped or dried
Instructions
- Preheat the oven to 350° F.
- Place the zucchini rounds on a baking sheet, brush each with olive oil, and add a pinch of salt. Bake until slightly tender for 5 minutes.
- Spoon a thin layer of sauce over each slice, and top with non-dairy cheese shreds, olives and oregano.
